ESTEFAN KITCHEN CABERNET SAUVIGNON - PRIVATE LABEL
COMPOSITION Grapes: 92% Cabernet Sauvignon, 8% Merlot
SENSORY This Cabernet has enticing notes of black cherry, blackberry, sugar plum, and a hint of vanilla. The finish is smooth and balanced on the palate.
CRAFTED The winemaking process for our Bordeaux varietals varies by a lot depending on seasonal changes in ripening and fruit quality. All lots were gently de-stemmed and crushed into separate fermentation vessels. We encourage extraction of color and skin tannin before fermentation during a 5-day cold soak. Each lot was fermented with a different yeast strain to provide complexity and variation in the individual programs. All lots were pumped over twice daily during active fermentation to encourage full extraction from the skins. Wines spent on average, 15 days on skins. Each wine was gently pressed off the skins, left to settle for three days, transferred to a barrel, and racked three times during its 21-month aging time. In August 2019 the individual lots were blended to taste before bottling in December 2019.

CELLAR Place this in a cool, dark cellar, not to exceed 55˚ F and it should age gracefully for 5-7 years or more.

CHEMISTRY pH: 3.85 Titratable Acidity: 5.7 g/L Alcohol: 14.2% FERMENTATION & AGING: Primary fermentation on the skins followed by malolactic fermentation in Stainless Steel. 18 months in barrel before racking to tank for blending.
